Lamingtons Cake

Prepare Lamingtons Cake

Lamingtons are a classic Australian cake that is made with cubes of sponge cake that are dipped in chocolate and then rolled in desiccated coconut. They are a delicious treat that is perfect for any occasion. To make lamingtons, you will need the following ingredients: - Sponge cake: You can either make your own sponge cake or buy a pre-made one. If you are making your own, you will need eggs, sugar, flour, baking powder, and butter. - Chocolate: You will need either melted chocolate or chocolate icing. - Desiccated coconut: This is a type of dried, shredded coconut that is used to coat the lamingtons. - Optional: You can also add some jam or cream to the center of the lamingtons for an extra special treat. To begin, preheat your oven to 350 degrees Fahrenheit and grease a 9x13 inch baking pan. In a large bowl, beat together the eggs and sugar until light and fluffy. In a separate bowl, sift together the flour and baking powder. Slowly add the flour mixture to the egg mixture, stirring until just combined. Finally, add the melted butter and stir until everything is combined. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely before cutting it into cubes. Once the cake is cooled, it’s time to assemble the lamingtons. Dip each cube of cake into the melted chocolate or chocolate icing, making sure to coat it completely. Then, roll the cube in the desiccated coconut. Place the finished lamingtons on a baking sheet lined with parchment paper and allow them to set. If desired, you can also add some jam or cream to the center of the lamingtons. To do this, simply cut a small hole in the center of each cube and fill it with the desired filling.
