Once you have all the ingredients, you'll need to start prepping. Begin by rinsing the split peas in a colander and then set them aside. Peel and dice the onion, mince the garlic, and dice the carrots and celery. Next, you'll need to start cooking. Heat a large pot over medium heat and add a tablespoon of oil. Once the oil is hot, add the diced onion and garlic and cook until the onion is translucent. Then add the carrots, celery, and mutton bone or hock and cook for a few minutes. Once the vegetables are cooked, add the split peas and enough water to cover the ingredients. Bring the soup to a boil and then reduce the heat to low and simmer for about an hour. Add the bay leaf and season with salt and pepper to taste. Once the soup has simmered for an hour, remove the mutton bone or hock and shred the meat.
